When I think of blueberry pie , I always think of summer and fresh blueberries.But this quark blueberry cake is also a treat in winter. You can easily use frozen fruit for this.
You can enjoy this blueberry cake with quark not only in summer with fresh blueberries or blueberries , but also in winter with frozen fruits.
The blueberry cake with quark is an absolute taste experience, because the combination of fresh blueberry fruits and the creamy quark layer is an absolute dream.
As you have surely seen in my other recipes, I only cook and bake with sugar substitutes. This blueberry quark cake is therefore made without sugar.
Of course you can also bake it with conventional industrial sugar. Here you use the 1:1 rule. Other sugar alternatives are ingredients such as honey or maple syrup.
The yoghurt and cream cheese create a great quark mass. This gives you the extra protein kick. Other alternatives for the quark are pudding, mascarpone, sour cream or skyr.
There are now so many different variations of cheesecake. This is a welcome guest at festivities such as Christmas, Easter, birthdays or at grandma’s coffee table. The fresh version of the blueberry goes perfectly with it.

Ingredients for our blueberry pie
- For the ground:
- 150g butter
- 100g sugar
- 1 egg
- 50g wholemeal or spelled flour
- 150g speculoos
- 1 teaspoon baking powder
- 4 packets of vanilla sugar
- For the filling:
- 50g sugar
- 150g yoghurt
- 100g cream cheese
- 1 egg
- 1 packet of vanilla sugar
- 300g blueberries


Ingredients and alternatives at a glance
- Xucker : I use Xucker (sugar substitute) to sweeten this cake. You can also use maple syrup, honey, rice syrup, or conventional industrial sugar.
- Butter : If you want to bake a vegan blueberry cake, you can use vegan butter here.
- Yoghurt & cream cheese : You can use the blueberry cake with conventional quark in a high fat level (low fat level is also possible), cake with sour cream, pudding and mascarpone. For more protein, I prefer to use skyr.
- Eggs: There are different egg substitute variations for the vegan variant
- Vanilla Extract : If you have it on hand, you can use vanilla extract. Alternatively, there is also the sugar-free vanilla sugar. (Or the one with sugar)
- Salt: If you’re not a salt fan, just leave it out.
- Flour : I always use spelled or. whole wheat flour. Of course you can also use conventional wheat flour.
- baking powder
- Blueberries : I prefer to use fresh blueberries. If you don’t have fresh blueberries on hand, you can use frozen ones. Make sure you defrost them first, otherwise you’ll have to bake the cake a little longer.
Other baking variations – blueberry cake with sour cream, pudding or mascapone
Blueberry cake with quark and sour cream
And this is how it’s done:
You proceed as already described in the recipe. The only subtle difference is that you can replace the sour cream 1:1 with our quark mass of cream cheese and yoghurt.
There is no difference when baking, only the consistency seems a bit firmer.
My conclusion of blueberry cake with quark and sour cream differs little from my original recipe. In terms of taste, it is definitely an experience. A healthy cake with quark, however, is not. Due to the high fat content of the sour cream, I would personally always use alternatives such as quark, skyr or cream cheese.
Blueberry pie with cottage cheese and pudding
For this you need the following:
- 170g cottage cheese
- 100g wholemeal flour
- 2 tablespoons vanilla pudding powder or vanilla extract
First you put all the ingredients in a bowl and stir them into a liquid mass. Then put the pudding powder with about 3 tablespoons of milk in a measuring cup until it is completely dissolved. It is important that there are no lumps here.
Then add the liquid vanilla pudding to the other liquid ingredients in the bowl and mix everything thoroughly.
The next step is to add the whole wheat flour and baking powder. You should make sure that the duration of the baking time is extended by about 10 minutes.
The pudding powder gives us a nice pudding consistency and in combination with the quark it makes the cake even creamier.
Then proceed as originally described in the recipe.
Blueberry pie with cottage cheese and mascarpone
You replace half of the quark amount with mascarpone e for our blueberry cake with quark .
This quark blueberry cake is extremely fatty due to the mascarpone, which is reflected in the calories. There is no question of a healthy cake here.
So that it doesn’t get too fatty, you can replace half of the quark with mascarpone. If you completely replace the curd with mascarpone, the cake will turn out to be quite heavy and very high in calories.
The preparation of the blueberry pie does not change. You can also use the ingredients as written above.
storage and durability
In general, the blueberry cake with quark keeps for about 3 days. In an airtight box, it stays fresh for a long time. You can then store it in the fridge for up to 7 days. If you want to keep it longer, you can also freeze the cake.
Cut into individual pieces and well packed, it will keep in the freezer for 3 months.
After defrosting, bake briefly in the oven and it will taste fresh again.
