Cream of Leek Soup

The popular French leek cream soup is a special vegetable soup from France. The skin ingredients are leeks, potatoes and cream. The original Vichyssoise recipe is traditionally eaten cold. 

This well-known French leek cream soup actually comes from France. The French chef at the time, Louis Diat from Vichy, is said to have invented it in New York in the 20th century. According to French chef Louis Diet, this recipe came from his mother. However, they always ate this soup warm.

Ingredients for our leek cream soup

  • 1 large leek
  • 2 potatoes
  • 2 carrots
  • cream cheese
  • Nutmeg, pepper, salt, paprika, parsley

This traditional French cream of leek soup is particularly packed with good and healthy nutrients. Adding cream cheese instead of cream makes it even healthier. Whether as a starter with main meals or as a main course, the original Vichyssoise recipe is simply delicious. Ideal for cold days. It can also be prepared very quickly.

Cream of Leek Soup

The popular French leek cream soup is a special vegetable soup from France. The skin ingredients are leeks, potatoes and cream. The original Vichyssoise recipe is traditionally eaten cold.

Ingredients
  

  • 1  large leek
  • 2 potatoes
  • 2 carrots
  • Cream Cheese
  • Nutmeg Pepper, Salt, Paprika, Parsley

Instructions
 

  • Slice the leek. Then set aside a small portion of the leeks (top tips). Now sear most of the leek slices.
  • Cut the remaining vegetables into small pieces and then put everything together in a saucepan with water. Let this cook for about 20 minutes.
  • Then season everything well.
  • Now puree the soup thoroughly.
  • Then add the cream cheese (1-2 tbsp) and season again.
  • Fry the remaining leek tips briefly and then use them to decorate the soup.
  • Tip: The soup tastes warm and cold.
  • Bon Appetit!
