Currants are currently available everywhere! I just made a delicious currant cake with it . It was so delicious, juicy and incredibly delicious!

I have listed everything you need for this below and you can conjure up a really delicious cake for your guests in no time at all.

This cake is sugar free and high in protein. So feasting is definitely allowed! Even if you’re on a weight loss program right now, don’t be afraid to try these cakes. You can snack here really carefree. Be sure to try this redcurrant cake and let me know how you liked it!

Ingredients for our currant cake

  • FOR THE GROUND
  • 1 egg 250 g almond flour
  • 175g butter
  • 1 pinch of salt
  • 80 g sugar
  • some butter for the mold
  • some flour for dough processing
  • FOR THE FILLING
  • 500 grams of currants
  • 4 egg whites 160 g sugar
  • 1 packet of vanilla sugar
  • 100 g ground almonds
  • 100 g cottage cheese
  • 50g chopped almonds
  • 50 g cornstarch
  • some powdered sugar for sprinkling

And this is how you prepare the currant cake

To start, you need to separate the egg and then set the egg white aside. Then knead the almond flour with the egg yolk, salt, sugar and butter to form a smooth dough. Then ask. dues cold for 30 minutes.

Then grease the bottom of the springform pan (Ø 26cm).

Now wash the currants and put them aside. Then roll out the shortcrust pastry and press it into the springform pan.

Be sure to pull up an edge about 5 cm high. In a bowl, beat the egg white that you have already set aside with four other egg whites until stiff. Then gradually add sugar and vanilla sugar and beat until a stable egg white has formed. Now mix in the almonds and starch and carefully fold in.

Finally add the currants. Mix everything carefully and spread evenly.

Bake everything together at 180 degrees for 60 minutes.

Tip: After 10-15 minutes, wrap the cake in aluminum foil so that. it doesn’t get too brown.

I’m telling you, this is an experience you absolutely have to try! Your guests will love it!
