Aubergine in the oven – It’s that easy!
Israeli cuisine offers a variety of different recipes on how to prepare eggplant. The absolute classic are the aubergines in the oven . This variant is particularly quick to prepare and also tastes incredibly delicious. For the aubergines in the oven you only need a few ingredients such as aubergine, cherry tomatoes, some pesto and cream cheese. So be sure to try it!
Ingredients:
- 1 eggplant
- olive oil
- goat cream cheese
- Pesto
- Handful of cocktail tomatoes
- Paprika, salt, pepper, chilli, fresh parsley
Aubergine in the oven – A culinary journey
For the recipe for the aubergine in the oven, first cut the aubergine lengthways and into fine strips. Then you rub them with olive oil. Then add goat’s cream cheese and pesto and season well. Then cut the cocktail tomatoes into slices and top them as well.
Bake the aubergine in the oven at 180 degrees for 30 minutes until soft and golden brown.
A great light meal, ideal on hot summer days!

Shelf life eggplant
When are eggplants bad? You can store the eggplants from the oven in the fridge for about 2-3 days. After that you should dispose of them. If the aubergines are stored for a long time, they may become mushy and the inside may be bad. Raw aubergines can be stored in the refrigerator at around 8-9 degrees Celsius for up to 10 days.
