This vegetarian national dish of Croatia and the Balkans is particularly popular in summer, when the pepper and tomato harvest season begins. Croatian Sataras is a light and healthy stir fry.Â

Ingredients
- 1 onion
- 2 peppers
- 3 carrots
- 1 egg plant
- a handful of olives
- a handful of beans
- 2 eggs
This traditional Croatian dish isn’t just a healthy stir-fry, it can be prepared as a main course alone, with bread, or as a warm appetizer.
Various side dishes such as rice, boiled potatoes or pasta are particularly suitable.

Step 1
Cut the vegetables into small pieces.
Step 2
Sauté the onion briefly and then add the vegetables.
Step 3
All together about 15 minutes. fry in the pan.
Step 4
