For the vegetarian Italian quiche with Mediterranean vegetables, I pre-grilled the zucchini, red onion, carrots and tomatoes in the oven and then topped them in the quiche. for the filling. I used the Swiss cheese Gruyer. It simply scores with its particularly intense aroma.

- 2 red onions
- 1 green zucchini
- 3 cloves of garlic
- 1 sprig of thyme
- 1 sprig of marjoram
- 1 sprig of rosemary
- 4 tbsp olive oil
- 4 eggs
- 200 ml light crème fraîche
- 200 g natural cream cheese
- 200 g walnuts (tree nuts also work)
- 100 g grated cheese (Gruyer) (Parmesan also works)
- 60 ml milk
Step by step guide
Step 1
Cut the vegetables and place them on the grid in the oven and grill for about 10 minutes. If necessary, turn it over again briefly and let it grill for another 5 minutes.
Step 2
Roll out the finished dough and press into the quiche form.
Step 3
For the filling, stir in the eggs, cream cheese, crème fraîche, milk and the Mediterranean spices. Then add the walnuts and cheese and stir vigorously again.

Then spread the grilled vegetables on the pastry base and then spread the quiche mixture over the vegetables.
Step 5
Bake in the oven at 180 degrees for about 20-30 minutes. Then let cool and enjoy.
